  • 1 cup cooked rice (white or brown)
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup salsa
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges (optional)
  1. 1If using ground meat, brown it in a skillet over medium heat. Drain off any excess grease.
  2. 2Stir in taco seasoning according to package directions.
  3. 3Assemble the burrito bowls: Start with a base of cooked rice in each bowl.
