  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 12 corn or flour tortillas
  • Optional toppings: avocado, salsa, sour cream, shredded cheese
  1. 1Preheat oven to 400°F (200°C).
  2. 2In a bowl, toss sweet potatoes with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. 3Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized, flipping halfway through.
  4. 4While sweet potatoes are roasting, prepare the black bean mixture. In a medium bowl, combine black beans, corn, red onion, cilantro, and lime juice.
  5. 5Warm tortillas according to package directions. (e.g., microwave for 30 seconds, or toast in a dry skillet).
