- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 (15-ounce) can black beans, rinsed and drained
- 1/2 cup corn kernels (fresh or frozen)
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 12 corn or flour tortillas
- Optional toppings: avocado, salsa, sour cream, shredded cheese
- 1Preheat oven to 400°F (200°C).
- 2In a bowl, toss sweet potatoes with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
