Spicy Black Bean Burgers

- 1 (15-ounce) can black beans, rinsed and drained
- 1/2 cup cooked brown rice
- 1/2 cup chopped onion
- 1/4 cup chopped red bell pepper
- 2 cloves garlic, minced
- 1 jalapeno pepper, seeded and minced (optional)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 cup chopped cilantro
- 1/4 cup breadcrumbs
- 1 tablespoon olive oil
- Salt and pepper to taste
- Burger buns
- Toppings of your choice (lettuce, tomato, avocado, etc.)
- 1In a large bowl, mash the black beans with a fork or potato masher, leaving some beans partially whole for texture.
- 2Add the cooked brown rice, chopped onion, red bell pepper, garlic, jalapeno (if using), chili powder, cumin, smoked paprika, cayenne pepper (if using), cilantro, and breadcrumbs to the mashed beans.
- 3Stir well to combine all ingredients. Season with salt and pepper to taste.
- 4Heat the olive oil in a large skillet over medium heat.
- 5Form the black bean mixture into 4 patties.
- 6Carefully place the patties in the hot skillet and cook for 5-7 minutes per side, or until heated through and lightly browned.
- 7Serve the black bean burgers on burger buns with your favorite toppings.
