  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup cooked brown rice
  • 1/2 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and minced (optional)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Burger buns
  • Toppings of your choice (lettuce, tomato, avocado, etc.)
  1. 1In a large bowl, mash the black beans with a fork or potato masher, leaving some beans partially whole for texture.
  2. 2Add the cooked brown rice, chopped onion, red bell pepper, garlic, jalapeno (if using), chili powder, cumin, smoked paprika, cayenne pepper (if using), cilantro, and breadcrumbs to the mashed beans.
  3. 3Stir well to combine all ingredients. Season with salt and pepper to taste.
  4. 4Heat the olive oil in a large skillet over medium heat.
  5. 5Form the black bean mixture into 4 patties.
  6. 6Carefully place the patties in the hot skillet and cook for 5-7 minutes per side, or until heated through and lightly browned.
  7. 7Serve the black bean burgers on burger buns with your favorite toppings.
