Classic Stuffed Bell Peppers
Hearty and flavorful stuffed bell peppers, perfect for a comforting weeknight meal.

- 4 large bell peppers (various colors)
- 1 pound ground beef or ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup cooked rice
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese (optional)
- 1Preheat oven to 375 degrees F (190 degrees C).
- 2Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- 3In a large skillet, brown the ground beef or turkey over medium heat. Drain off any excess grease.
- 4Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
- 5Stir in the tomato sauce, diced tomatoes, cooked rice, oregano, basil, salt, and pepper.
- 6Simmer for 5 minutes, stirring occasionally.
- 7Spoon the meat mixture into the bell peppers, filling them to the top.
- 8Place the stuffed bell peppers in a baking dish. Add about 1/2 inch of water to the bottom of the dish.
- 9Cover the baking dish with foil and bake for 30 minutes.
- 10Remove the foil and bake for another 15 minutes, or until the bell peppers are tender.
- 11If desired, sprinkle the tops of the bell peppers with shredded cheddar cheese during the last 5 minutes of baking.
- 12Let cool slightly before serving.
