Classic Stuffed Bell Peppers

Classic Stuffed Bell Peppers

  • 4 large bell peppers (various colors)
  • 1 pound ground beef or ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup cooked rice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional)
  1. 1Preheat oven to 375 degrees F (190 degrees C).
  2. 2Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. 3In a large skillet, brown the ground beef or turkey over medium heat. Drain off any excess grease.
  4. 4Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  5. 5Stir in the tomato sauce, diced tomatoes, cooked rice, oregano, basil, salt, and pepper.
  6. 6Simmer for 5 minutes, stirring occasionally.
  7. 7Spoon the meat mixture into the bell peppers, filling them to the top.
  8. 8Place the stuffed bell peppers in a baking dish. Add about 1/2 inch of water to the bottom of the dish.
  9. 9Cover the baking dish with foil and bake for 30 minutes.
  10. 10Remove the foil and bake for another 15 minutes, or until the bell peppers are tender.
  11. 11If desired, sprinkle the tops of the bell peppers with shredded cheddar cheese during the last 5 minutes of baking.
  12. 12Let cool slightly before serving.
