medium
- 1 pound spaghetti
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 pound ground beef
- 1/2 pound ground pork (optional)
- 1/2 cup dry red wine
- 28 ounces crushed tomatoes
- 14 ounces tomato sauce
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley, for garnish
- Grated Parmesan cheese, for serving
- 1Cook spaghetti according to package directions. Drain and set aside.
- 2Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- 3Add ground beef and pork (if using) and cook, breaking up the meat with a spoon, until browned.
- 4Drain off any excess grease.
- 5Pour in red wine and cook, scraping up any browned bits from the bottom of the pot, until the wine is almost evaporated, about 2-3 minutes.
- 6Stir in crushed tomatoes, tomato sauce, tomato paste, oregano, basil, salt, and pepper.
- 7Bring to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, or up to 3 hours, stirring occasionally.
- 8Taste and adjust seasonings as needed.
- 9Serve Bolognese sauce over spaghetti. Garnish with fresh parsley and grated Parmesan cheese.
