  • 1 pound spaghetti
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 pound ground beef
  • 1/2 pound ground pork (optional)
  • 1/2 cup dry red wine
  • 28 ounces crushed tomatoes
  • 14 ounces tomato sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley, for garnish
  • Grated Parmesan cheese, for serving
  1. 1Cook spaghetti according to package directions. Drain and set aside.
  2. 2Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  3. 3Add ground beef and pork (if using) and cook, breaking up the meat with a spoon, until browned.
  4. 4Drain off any excess grease.
  5. 5Pour in red wine and cook, scraping up any browned bits from the bottom of the pot, until the wine is almost evaporated, about 2-3 minutes.
  6. 6Stir in crushed tomatoes, tomato sauce, tomato paste, oregano, basil, salt, and pepper.
  7. 7Bring to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, or up to 3 hours, stirring occasionally.
  8. 8Taste and adjust seasonings as needed.
  9. 9Serve Bolognese sauce over spaghetti. Garnish with fresh parsley and grated Parmesan cheese.
