Classic Beef Stroganoff
A creamy and comforting beef stroganoff, perfect served over egg noodles.

- 1.5 lbs beef sirloin, thinly sliced against the grain
- 1 tbsp olive oil
- 1 medium onion, chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 cup beef broth
- 1/2 cup dry sherry or dry white wine (optional)
- 1 cup sour cream
- 2 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- Salt and pepper to taste
- 1 lb egg noodles, cooked according to package directions
- Fresh parsley, chopped, for garnish
- 1Season the beef slices with salt and pepper.
- 2Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides. Remove beef from skillet and set aside.
- 3Add the onion and mushrooms to the skillet and cook until softened, about 5-7 minutes. Add the garlic and cook for 1 minute more.
- 4Stir in the flour and cook for 1 minute, stirring constantly.
- 5Gradually whisk in the beef broth and sherry (if using), scraping up any browned bits from the bottom of the skillet.
- 6Bring the sauce to a simmer and cook until thickened, about 3-5 minutes.
- 7Stir in the sour cream, Dijon mustard, and Worcestershire sauce. Reduce heat to low and simmer for another 2-3 minutes, being careful not to boil.
- 8Return the beef to the skillet and heat through. Season with salt and pepper to taste.
- 9Serve the stroganoff over cooked egg noodles. Garnish with fresh parsley.
