Classic Beef Stroganoff

  • 1.5 lbs beef sirloin, thinly sliced against the grain
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 cup beef broth
  • 1/2 cup dry sherry or dry white wine (optional)
  • 1 cup sour cream
  • 2 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 1 lb egg noodles, cooked according to package directions
  • Fresh parsley, chopped, for garnish
  1. 1Season the beef slices with salt and pepper.
  2. 2Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides. Remove beef from skillet and set aside.
  3. 3Add the onion and mushrooms to the skillet and cook until softened, about 5-7 minutes. Add the garlic and cook for 1 minute more.
  4. 4Stir in the flour and cook for 1 minute, stirring constantly.
  5. 5Gradually whisk in the beef broth and sherry (if using), scraping up any browned bits from the bottom of the skillet.
  6. 6Bring the sauce to a simmer and cook until thickened, about 3-5 minutes.
  7. 7Stir in the sour cream, Dijon mustard, and Worcestershire sauce. Reduce heat to low and simmer for another 2-3 minutes, being careful not to boil.
  8. 8Return the beef to the skillet and heat through. Season with salt and pepper to taste.
  9. 9Serve the stroganoff over cooked egg noodles. Garnish with fresh parsley.
