  • 4 large flour tortillas
  • 6 large eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled breakfast sausage (or bacon)
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • Optional: Salsa, hot sauce, sour cream, avocado
  1. 1In a bowl, whisk together eggs, milk, salt, and pepper.
  2. 2Heat butter in a large skillet over medium heat.
  3. 3Add diced onion and bell pepper to the skillet and cook until softened, about 3-5 minutes.
  4. 4Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are set but still slightly moist.
  5. 5Stir in the cooked sausage and cheddar cheese.
  6. 6Warm the tortillas in a dry skillet or microwave until pliable.
  7. 7Divide the egg mixture evenly among the tortillas.
  8. 8Fold in the sides of each tortilla, then fold up the bottom and roll into a burrito.
