  • 6 large eggs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 5 oz baby spinach
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  1. 1Preheat oven to 350°F (175°C).
  2. 2In a large bowl, whisk together eggs, milk, Parmesan cheese, salt, and pepper.
  3. 3Heat olive oil in a 10-inch oven-safe skillet over medium heat. Add onion and cook until softened, about 3 minutes.
  4. 4Add garlic and mushrooms to the skillet and cook until the mushrooms are tender and have released their liquid, about 5-7 minutes.
  5. 5Stir in spinach and cook until wilted, about 1-2 minutes.
  6. 6Pour the egg mixture into the skillet over the vegetables.
  7. 7Cook on the stovetop for 2-3 minutes, or until the edges begin to set.
