Spinach and Mushroom Frittata

- 6 large eggs
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 8 oz mushrooms, sliced
- 5 oz baby spinach
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1Preheat oven to 350°F (175°C).
- 2In a large bowl, whisk together eggs, milk, Parmesan cheese, salt, and pepper.
- 3Heat olive oil in a 10-inch oven-safe skillet over medium heat. Add onion and cook until softened, about 3 minutes.
- 4Add garlic and mushrooms to the skillet and cook until the mushrooms are tender and have released their liquid, about 5-7 minutes.
- 5Stir in spinach and cook until wilted, about 1-2 minutes.
- 6Pour the egg mixture into the skillet over the vegetables.
- 7Cook on the stovetop for 2-3 minutes, or until the edges begin to set.
