  • 2 large eggs
  • 1 tablespoon milk or water
  • 1/4 cup chopped bell peppers (any color)
  • 1/4 cup chopped onion
  • 1/4 cup chopped mushrooms
  • 1/4 cup chopped spinach
  • 1 tablespoon shredded cheddar cheese (optional)
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  1. 1In a bowl, whisk together the eggs, milk (or water), salt, and pepper.
  2. 2Heat the olive oil or butter in a non-stick skillet over medium heat.
  3. 3Add the chopped bell peppers, onion, and mushrooms to the skillet and cook until softened, about 5 minutes.
  4. 4Add the spinach and cook until wilted, about 1 minute.
  5. 5Pour the egg mixture over the vegetables in the skillet.
  6. 6Cook for 2-3 minutes, or until the edges of the omelette start to set.
  7. 7Sprinkle the shredded cheddar cheese (if using) over half of the omelette.
  8. 8Carefully fold the omelette in half and cook for another minute, or until the cheese is melted and the omelette is cooked through.
  9. 9Slide the omelette onto a plate and serve immediately.
