Vegetable Omelette
A quick and healthy omelette packed with your favorite vegetables.

- 2 large eggs
 - 1 tablespoon milk or water
 - 1/4 cup chopped bell peppers (any color)
 - 1/4 cup chopped onion
 - 1/4 cup chopped mushrooms
 - 1/4 cup chopped spinach
 - 1 tablespoon shredded cheddar cheese (optional)
 - 1 tablespoon olive oil or butter
 - Salt and pepper to taste
 
- 1In a bowl, whisk together the eggs, milk (or water), salt, and pepper.
 - 2Heat the olive oil or butter in a non-stick skillet over medium heat.
 - 3Add the chopped bell peppers, onion, and mushrooms to the skillet and cook until softened, about 5 minutes.
 - 4Add the spinach and cook until wilted, about 1 minute.
 - 5Pour the egg mixture over the vegetables in the skillet.
 - 6Cook for 2-3 minutes, or until the edges of the omelette start to set.
 - 7Sprinkle the shredded cheddar cheese (if using) over half of the omelette.
 - 8Carefully fold the omelette in half and cook for another minute, or until the cheese is melted and the omelette is cooked through.
 - 9Slide the omelette onto a plate and serve immediately.
