Quick & Easy Vegetable Stir-Fry

- 1 tbsp vegetable oil
 - 1 onion, sliced
 - 2 cloves garlic, minced
 - 1 inch ginger, grated
 - 1 red bell pepper, sliced
 - 1 green bell pepper, sliced
 - 1 cup broccoli florets
 - 1 cup sliced carrots
 - 1 cup snap peas
 - 1/4 cup soy sauce
 - 2 tbsp rice vinegar
 - 1 tbsp sesame oil
 - 1 tsp cornstarch (mixed with 2 tbsp water)
 - Cooked rice, for serving (optional)
 - Sesame seeds, for garnish (optional)
 - Green onions, chopped, for garnish (optional)
 
- 1Heat vegetable oil in a large wok or skillet over medium-high heat.
 - 2Add onion and cook until softened, about 3 minutes.
 - 3Add garlic and ginger and cook for 1 minute more, until fragrant.
 - 4Add bell peppers, broccoli, and carrots. Stir-fry for 5 minutes, until vegetables are slightly tender.
 - 5Add snap peas and stir-fry for another 2 minutes.
 - 6In a small bowl, whisk together soy sauce, rice vinegar, and sesame oil.
 - 7Pour the sauce over the vegetables and bring to a simmer.
 - 8Add the cornstarch slurry and stir continuously until the sauce thickens, about 1 minute.
 - 9Serve immediately over cooked rice, if desired. Garnish with sesame seeds and green onions.
