Sesame Ginger Tofu Stir-Fry

- 1 block (14 oz) extra-firm tofu, pressed and cubed
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup sliced carrots
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon maple syrup or honey
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- Sesame seeds, for garnish
- Cooked rice, for serving
- 1Press the tofu to remove excess water. Cut into 1/2-inch cubes.
- 2In a bowl, toss the tofu cubes with cornstarch until evenly coated.
- 3Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown and crispy on all sides, about 8-10 minutes. Remove from the skillet and set aside.
- 4Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the bell peppers, broccoli, and carrots. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
- 5In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, maple syrup, ginger, garlic, and red pepper flakes (if using).
- 6Pour the sauce over the vegetables in the skillet. Bring to a simmer and cook for 1-2 minutes, or until the sauce has thickened slightly.
- 7Return the tofu to the skillet and toss to coat with the sauce.
- 8Serve the stir-fry over cooked rice. Garnish with sesame seeds.
