  • 4 corn tortillas
  • 2 tablespoons vegetable oil
  • 4 large eggs
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup shredded cheddar cheese
  • Optional toppings: avocado slices, cilantro, sour cream
  1. 1Prepare the salsa ranchera: Heat 1 tablespoon of oil in a skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. 2Add the diced tomatoes, chili powder, and cumin. Season with salt and pepper. Bring to a simmer and cook for 10-15 minutes, or until the sauce has thickened slightly.
  3. 3While the sauce simmers, heat the remaining 1 tablespoon of oil in a separate skillet over medium heat. Fry the tortillas until lightly golden and pliable. Set aside.
  4. 4Fry the eggs to your desired doneness. Season with salt and pepper.
  5. 5To assemble, place a fried tortilla on a plate. Top with a fried egg, a generous spoonful of salsa ranchera, and shredded cheese.
  6. 6Add your favorite toppings, such as avocado slices, cilantro, or sour cream. Serve immediately.
