Huevos Rancheros

- 4 corn tortillas
 - 2 tablespoons vegetable oil
 - 4 large eggs
 - 1/2 onion, chopped
 - 1 clove garlic, minced
 - 1 (14.5 ounce) can diced tomatoes, undrained
 - 1/2 teaspoon chili powder
 - 1/4 teaspoon cumin
 - Salt and pepper to taste
 - 1/4 cup shredded cheddar cheese
 - Optional toppings: avocado slices, cilantro, sour cream
 
- 1Prepare the salsa ranchera: Heat 1 tablespoon of oil in a skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
 - 2Add the diced tomatoes, chili powder, and cumin. Season with salt and pepper. Bring to a simmer and cook for 10-15 minutes, or until the sauce has thickened slightly.
 - 3While the sauce simmers, heat the remaining 1 tablespoon of oil in a separate skillet over medium heat. Fry the tortillas until lightly golden and pliable. Set aside.
 - 4Fry the eggs to your desired doneness. Season with salt and pepper.
 - 5To assemble, place a fried tortilla on a plate. Top with a fried egg, a generous spoonful of salsa ranchera, and shredded cheese.
 - 6Add your favorite toppings, such as avocado slices, cilantro, or sour cream. Serve immediately.
