Classic Vietnamese Banh Mi

- 1 baguette, preferably Vietnamese-style (light and airy)
- 1/2 cup mayonnaise
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon sesame oil
- 1/4 teaspoon ground black pepper
- 4 ounces Vietnamese ham (Cha Lua), thinly sliced
- 4 ounces roasted pork (Thit Nuong), thinly sliced (optional)
- 4 ounces pate (optional)
- 1/2 cup pickled carrots and daikon (Do Chua)
- 1/4 cup cilantro sprigs
- 1/4 cup thinly sliced cucumber
- Jalapeño slices, to taste (optional)
- 1Prepare the sauce: In a small bowl, whisk together soy sauce, rice vinegar, sugar, sesame oil, and black pepper. Set aside.
- 2Slice the baguette lengthwise, being careful not to cut all the way through.
- 3Spread mayonnaise generously on both cut sides of the baguette.
- 4If using pate, spread it evenly on one or both sides of the baguette.
- 5Layer the Vietnamese ham, roasted pork (if using), and any other desired meats onto the bottom half of the baguette.
- 6Drizzle the prepared sauce over the meats.
- 7Top with pickled carrots and daikon, cilantro sprigs, cucumber slices, and jalapeño slices (if using).
- 8Close the sandwich and press gently to compact the filling.
- 9Cut the banh mi in half or into desired serving sizes.
- 10Serve immediately and enjoy!
