Classic Chickpea Salad Sandwich

- 1 (15-ounce) can chickpeas, drained and rinsed
- 1/4 cup vegan mayonnaise
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 8 slices of your favorite bread
- 1In a medium bowl, mash the chickpeas with a fork or potato masher until mostly smooth, but still with some texture.
- 2Add the vegan mayonnaise, celery, red onion, parsley, lemon juice, Dijon mustard, and garlic powder to the mashed chickpeas.
- 3Season with salt and pepper to taste. Mix well to combine.
- 4Spread the chickpea salad evenly onto four slices of bread.
- 5Top with the remaining slices of bread to form sandwiches.
- 6Serve immediately or chill for later.
