  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1/4 cup vegan mayonnaise
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 slices of your favorite bread
  1. 1In a medium bowl, mash the chickpeas with a fork or potato masher until mostly smooth, but still with some texture.
  2. 2Add the vegan mayonnaise, celery, red onion, parsley, lemon juice, Dijon mustard, and garlic powder to the mashed chickpeas.
  3. 3Season with salt and pepper to taste. Mix well to combine.
  4. 4Spread the chickpea salad evenly onto four slices of bread.
  5. 5Top with the remaining slices of bread to form sandwiches.
  6. 6Serve immediately or chill for later.
