Mediterranean Quinoa Salad
A fresh and flavorful salad packed with protein and healthy fats, perfect as a light lunch or side dish.

- 1 cup quinoa, rinsed
 - 2 cups vegetable broth (or water)
 - 1/2 cup chopped cucumber
 - 1/2 cup chopped red onion
 - 1 cup cherry tomatoes, halved
 - 1/2 cup Kalamata olives, pitted and halved
 - 1/2 cup crumbled feta cheese
 - 1/4 cup chopped fresh parsley
 - 1/4 cup chopped fresh mint
 - 3 tablespoons olive oil
 - 2 tablespoons lemon juice
 - 1 clove garlic, minced
 - Salt and pepper to taste
 
- 1Rinse the quinoa in a fine-mesh sieve under cold water.
 - 2In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce heat and simmer, covered, for 15 minutes, or until the liquid is absorbed and the quinoa is cooked.
 - 3Fluff the quinoa with a fork and let it cool slightly.
 - 4In a large bowl, combine the cooked quinoa, cucumber, red onion, cherry tomatoes, Kalamata olives, feta cheese, parsley, and mint.
 - 5In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
 - 6Pour the dressing over the salad and toss to combine.
 - 7Serve immediately or chill for later.
