Mediterranean Quinoa Salad

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth (or water)
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped red onion
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  1. 1Rinse the quinoa in a fine-mesh sieve under cold water.
  2. 2In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce heat and simmer, covered, for 15 minutes, or until the liquid is absorbed and the quinoa is cooked.
  3. 3Fluff the quinoa with a fork and let it cool slightly.
  4. 4In a large bowl, combine the cooked quinoa, cucumber, red onion, cherry tomatoes, Kalamata olives, feta cheese, parsley, and mint.
  5. 5In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  6. 6Pour the dressing over the salad and toss to combine.
  7. 7Serve immediately or chill for later.
