  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons all-purpose flour or chickpea flour
  • Vegetable oil, for frying
  • 4 large flour tortillas
  • 1/2 cup tahini
  • 1/4 cup water
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 cup shredded lettuce
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped cucumber
  • Optional toppings: pickled onions, hot sauce
  1. 1Prepare the falafel: In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, lemon juice, cumin, coriander, cayenne pepper (if using), salt, and pepper. Process until a coarse paste forms.
  2. 2Add the flour and pulse until just combined. Do not overmix.
  3. 3Form the falafel mixture into small, flattened patties.
  4. 4Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat.
  5. 5Carefully place the falafel patties into the hot oil and fry for 3-4 minutes per side, or until golden brown and crispy.
  6. 6Remove the falafel from the skillet and drain on paper towels.
  7. 7Prepare the tahini sauce: In a small bowl, whisk together tahini, water, lemon juice, garlic, salt, and pepper until smooth and creamy. Add more water if needed to reach desired consistency.
  8. 8Warm the tortillas according to package instructions.
  9. 9Assemble the wraps: Spread a generous amount of tahini sauce onto each tortilla.
  10. 10Top with shredded lettuce, chopped tomatoes, cucumber, and fried falafel patties.
  11. 11Add any optional toppings you like, such as pickled onions or hot sauce.
  12. 12Fold the sides of the tortilla inward and roll up tightly.
  13. 13Serve immediately.
