Caprese Panini
A simple and delicious panini with fresh mozzarella, tomatoes, and basil.

- 2 slices of ciabatta bread
 - 4 oz fresh mozzarella, sliced
 - 1 large tomato, sliced
 - 4-5 fresh basil leaves
 - 2 tbsp pesto (store-bought or homemade)
 - 1 tbsp olive oil
 - Salt and pepper to taste
 
- 1Preheat a panini press or skillet over medium heat.
 - 2Spread pesto evenly on the inside of both slices of ciabatta bread.
 - 3Layer mozzarella, tomato slices, and basil leaves on one slice of bread.
 - 4Season with salt and pepper.
 - 5Top with the other slice of bread.
 - 6Brush the outside of the top slice of bread with olive oil.
 - 7Place the panini in the panini press or skillet.
 - 8If using a skillet, place a heavy pan on top of the panini to press it down.
 - 9Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
 - 10Remove from the heat, slice in half, and serve immediately.
