Caprese Panini

Caprese Panini

  • 2 slices of ciabatta bread
  • 4 oz fresh mozzarella, sliced
  • 1 large tomato, sliced
  • 4-5 fresh basil leaves
  • 2 tbsp pesto (store-bought or homemade)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  1. 1Preheat a panini press or skillet over medium heat.
  2. 2Spread pesto evenly on the inside of both slices of ciabatta bread.
  3. 3Layer mozzarella, tomato slices, and basil leaves on one slice of bread.
  4. 4Season with salt and pepper.
  5. 5Top with the other slice of bread.
  6. 6Brush the outside of the top slice of bread with olive oil.
  7. 7Place the panini in the panini press or skillet.
  8. 8If using a skillet, place a heavy pan on top of the panini to press it down.
  9. 9Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  10. 10Remove from the heat, slice in half, and serve immediately.
