Classic New York Cheesecake
A rich and creamy New York style cheesecake with a graham cracker crust.

- 1 1/2 cups graham cracker crumbs
 - 5 tablespoons unsalted butter, melted
 - 1/4 cup granulated sugar
 - 3 (8 ounce) packages cream cheese, softened
 - 1 1/2 cups granulated sugar
 - 1/4 cup all-purpose flour
 - 1 teaspoon vanilla extract
 - 1/2 teaspoon lemon zest
 - 2 large eggs
 - 1 cup heavy cream
 
- 1Preheat oven to 350 degrees F (175 degrees C).
 - 2In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press mixture into the bottom of a 9-inch springform pan.
 - 3Bake crust for 10 minutes.
 - 4In a large bowl, beat cream cheese and 1 1/2 cups sugar until smooth.
 - 5Beat in flour, vanilla extract, and lemon zest.
 - 6Add eggs one at a time, beating well after each addition. Stir in heavy cream.
 - 7Pour batter over prebaked crust.
 - 8Bake for 55-70 minutes, or until center is just slightly jiggly.
 - 9Turn off oven and let cheesecake cool in oven with the door slightly ajar for 1 hour.
 - 10Remove from oven and cool completely. Refrigerate for at least 4 hours, or overnight, before serving.
 - 11Run a thin knife around the edge of the pan before releasing the sides of the springform pan.
