  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon lemon zest
  • 2 large eggs
  • 1 cup heavy cream
  1. 1Preheat oven to 350 degrees F (175 degrees C).
  2. 2In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press mixture into the bottom of a 9-inch springform pan.
  3. 3Bake crust for 10 minutes.
  4. 4In a large bowl, beat cream cheese and 1 1/2 cups sugar until smooth.
  5. 5Beat in flour, vanilla extract, and lemon zest.
  6. 6Add eggs one at a time, beating well after each addition. Stir in heavy cream.
  7. 7Pour batter over prebaked crust.
  8. 8Bake for 55-70 minutes, or until center is just slightly jiggly.
  9. 9Turn off oven and let cheesecake cool in oven with the door slightly ajar for 1 hour.
  10. 10Remove from oven and cool completely. Refrigerate for at least 4 hours, or overnight, before serving.
  11. 11Run a thin knife around the edge of the pan before releasing the sides of the springform pan.
