medium
- 1 1/2 cups strong brewed coffee, cooled
- 1/4 cup coffee liqueur (optional)
- 1 package (3 ounces) ladyfingers (savoiardi)
- 6 large egg yolks
- 3/4 cup granulated sugar
- 1 pound mascarpone cheese, softened
- 1 1/2 cups heavy cream
- Unsweetened cocoa powder, for dusting
- 1In a shallow dish, combine the cooled coffee and coffee liqueur (if using). Dip each ladyfinger briefly in the coffee mixture and arrange in a single layer in the bottom of a 9x13 inch baking dish.
- 2In a large bowl, whisk together the egg yolks and sugar until light and pale yellow, about 3-5 minutes.
- 3In a separate bowl, beat the mascarpone cheese until smooth. Gradually add the mascarpone to the egg yolk mixture and mix until combined.
- 4In another clean bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
- 5Spread half of the mascarpone cream over the ladyfingers. Arrange another layer of coffee-soaked ladyfingers on top of the cream. Spread the remaining mascarpone cream over the ladyfingers.
- 6Cover the tiramisu and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
- 7Before serving, dust the top of the tiramisu generously with cocoa powder. Cut into squares and serve chilled.
