  • 6 ounces bittersweet chocolate, chopped
  • 4 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  1. 1Melt the chocolate in a heatproof bowl set over a saucepan of simmering water (or in the microwave in 30-second intervals, stirring in between). Remove from heat and let cool slightly.
  2. 2In a separate bowl, whisk together the egg yolks and sugar until pale and thick.
  3. 3Gradually whisk the melted chocolate into the egg yolk mixture until smooth.
  4. 4In another bowl, beat the egg whites with the salt until stiff peaks form.
  5. 5Gently fold one-third of the egg whites into the chocolate mixture to lighten it. Then, gently fold in the remaining egg whites until just combined.
  6. 6In a separate bowl, whip the heavy cream until soft peaks form. Stir in the vanilla extract.
  7. 7Gently fold the whipped cream into the chocolate mixture until just combined.
  8. 8Divide the mousse among individual serving dishes or glasses.
  9. 9Cover and refrigerate for at least 3 hours, or preferably overnight, to allow the mousse to set.
  10. 10Garnish with chocolate shavings, berries, or whipped cream before serving (optional).
