Classic Chocolate Mousse
A rich and decadent chocolate mousse, perfect for any occasion.

- 6 ounces bittersweet chocolate, chopped
 - 4 large eggs, separated
 - 1/4 cup granulated sugar
 - 1/4 teaspoon salt
 - 1 cup heavy cream
 - 1 teaspoon vanilla extract
 
- 1Melt the chocolate in a heatproof bowl set over a saucepan of simmering water (or in the microwave in 30-second intervals, stirring in between). Remove from heat and let cool slightly.
 - 2In a separate bowl, whisk together the egg yolks and sugar until pale and thick.
 - 3Gradually whisk the melted chocolate into the egg yolk mixture until smooth.
 - 4In another bowl, beat the egg whites with the salt until stiff peaks form.
 - 5Gently fold one-third of the egg whites into the chocolate mixture to lighten it. Then, gently fold in the remaining egg whites until just combined.
 - 6In a separate bowl, whip the heavy cream until soft peaks form. Stir in the vanilla extract.
 - 7Gently fold the whipped cream into the chocolate mixture until just combined.
 - 8Divide the mousse among individual serving dishes or glasses.
 - 9Cover and refrigerate for at least 3 hours, or preferably overnight, to allow the mousse to set.
 - 10Garnish with chocolate shavings, berries, or whipped cream before serving (optional).
