Avocado Toast with Poached Eggs

  • 2 slices of bread (sourdough or whole wheat recommended)
  • 1 ripe avocado
  • 2 large eggs
  • 1 tbsp white vinegar
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Everything bagel seasoning (optional)
  • Fresh cilantro or parsley (optional, for garnish)
  1. 1Toast the bread to your desired level of crispness.
  2. 2While the bread is toasting, prepare the avocado: Mash the avocado in a small bowl and season with salt and pepper.
  3. 3Prepare the poaching liquid: Fill a saucepan with about 3 inches of water and bring to a simmer. Add the white vinegar.
  4. 4Crack each egg into a separate small bowl or ramekin.
  5. 5Create a gentle whirlpool in the simmering water using a spoon. Gently slide one egg into the center of the whirlpool.
  6. 6Repeat with the second egg.
  7. 7Poach the eggs for 3-4 minutes for a runny yolk, or longer if you prefer a firmer yolk. The whites should be set but the yolks still soft.
  8. 8While the eggs are poaching, spread the mashed avocado evenly on the toasted bread.
  9. 9Carefully remove the poached eggs from the water using a slotted spoon and place them on top of the avocado toast.
  10. 10Season with salt, pepper, red pepper flakes (if using), and everything bagel seasoning (if using).
