Avocado Toast with Poached Eggs

- 2 slices of bread (sourdough or whole wheat recommended)
 - 1 ripe avocado
 - 2 large eggs
 - 1 tbsp white vinegar
 - Salt and pepper to taste
 - Red pepper flakes (optional)
 - Everything bagel seasoning (optional)
 - Fresh cilantro or parsley (optional, for garnish)
 
- 1Toast the bread to your desired level of crispness.
 - 2While the bread is toasting, prepare the avocado: Mash the avocado in a small bowl and season with salt and pepper.
 - 3Prepare the poaching liquid: Fill a saucepan with about 3 inches of water and bring to a simmer. Add the white vinegar.
 - 4Crack each egg into a separate small bowl or ramekin.
 - 5Create a gentle whirlpool in the simmering water using a spoon. Gently slide one egg into the center of the whirlpool.
 - 6Repeat with the second egg.
 - 7Poach the eggs for 3-4 minutes for a runny yolk, or longer if you prefer a firmer yolk. The whites should be set but the yolks still soft.
 - 8While the eggs are poaching, spread the mashed avocado evenly on the toasted bread.
 - 9Carefully remove the poached eggs from the water using a slotted spoon and place them on top of the avocado toast.
 - 10Season with salt, pepper, red pepper flakes (if using), and everything bagel seasoning (if using).
