  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup fresh lemon juice (from about 6-8 lemons)
  • 1 tablespoon lemon zest
  1. 1In a saucepan, combine sugar and water. Heat over medium heat, stirring until sugar is completely dissolved. Bring to a simmer for 1 minute, then remove from heat.
  2. 2Stir in lemon juice and lemon zest. Let the mixture cool completely.
  3. 3Pour the mixture into a shallow container (like a metal baking pan) and freeze for 2-3 hours, or until the edges are frozen.
  4. 4Using a fork, break up the frozen edges and stir the mixture well. Return to the freezer for another 2-3 hours.
  5. 5Repeat the breaking and stirring process every 1-2 hours until the sorbet is completely frozen but still scoopable (this may take 4-6 hours total).
  6. 6If the sorbet becomes too hard, let it sit at room temperature for a few minutes before scooping.
  7. 7Scoop and serve immediately. Garnish with lemon zest, if desired.
