Lemon Garlic Roast Chicken

- 1 whole chicken (3-4 lbs)
- 1 lemon, halved
- 6 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth or white wine (optional)
- 1 onion, quartered (optional)
- 2 carrots, chopped (optional)
- 2 celery stalks, chopped (optional)
- 1Preheat oven to 400°F (200°C).
- 2Rinse the chicken inside and out, and pat dry with paper towels.
- 3In a small bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- 4Rub the garlic-herb mixture all over the chicken, including under the skin of the breast.
- 5Place one lemon half inside the chicken cavity.
- 6If using, place quartered onion, chopped carrots, and celery stalks in the bottom of a roasting pan.
- 7Place the chicken on top of the vegetables (or directly in the roasting pan if not using vegetables).
- 8Squeeze the juice of the remaining lemon half over the chicken.
- 9Pour chicken broth or white wine into the bottom of the roasting pan (optional, helps keep the chicken moist).
- 10Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
- 11Let the chicken rest for 10-15 minutes before carving and serving.
