Lemon Garlic Roast Chicken

  • 1 whole chicken (3-4 lbs)
  • 1 lemon, halved
  • 6 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth or white wine (optional)
  • 1 onion, quartered (optional)
  • 2 carrots, chopped (optional)
  • 2 celery stalks, chopped (optional)
  1. 1Preheat oven to 400°F (200°C).
  2. 2Rinse the chicken inside and out, and pat dry with paper towels.
  3. 3In a small bowl, combine olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  4. 4Rub the garlic-herb mixture all over the chicken, including under the skin of the breast.
  5. 5Place one lemon half inside the chicken cavity.
  6. 6If using, place quartered onion, chopped carrots, and celery stalks in the bottom of a roasting pan.
  7. 7Place the chicken on top of the vegetables (or directly in the roasting pan if not using vegetables).
  8. 8Squeeze the juice of the remaining lemon half over the chicken.
  9. 9Pour chicken broth or white wine into the bottom of the roasting pan (optional, helps keep the chicken moist).
  10. 10Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
  11. 11Let the chicken rest for 10-15 minutes before carving and serving.
