Creamy Coconut Rice Pudding

- 1 cup short-grain rice (such as Arborio or sushi rice)
- 4 cups full-fat coconut milk
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup shredded coconut, toasted (optional, for garnish)
- 1Rinse the rice under cold water until the water runs clear.
- 2In a medium saucepan, combine the rinsed rice, coconut milk, sugar, and salt.
- 3Bring the mixture to a simmer over medium heat, then reduce the heat to low.
- 4Cover the saucepan and cook for 30-40 minutes, or until the rice is tender and the pudding has thickened, stirring occasionally to prevent sticking.
- 5Remove from heat and stir in the vanilla extract.
