  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, chopped
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup red lentils, rinsed
  • 4 cups vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  1. 1Heat coconut oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. 2Add garlic, ginger, and bell pepper and cook for another 3 minutes, until fragrant.
  3. 3Stir in curry powder, turmeric, and red pepper flakes (if using). Cook for 1 minute more.
  4. 4Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  5. 5Stir in coconut milk and lime juice. Season with salt and pepper to taste.
  6. 6Simmer for another 5 minutes to heat through.
  7. 7Serve hot, garnished with fresh cilantro.
