  • 1 cup brown or green lentils, rinsed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 tbsp lemon juice (optional)
  • Fresh parsley, chopped (for garnish)
  1. 1Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. 2Add garlic and cook for 1 minute more, until fragrant.
  3. 3Stir in lentils, vegetable broth, diced tomatoes, thyme, oregano, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  4. 4Remove bay leaf. Season with salt and pepper to taste.
  5. 5If desired, stir in lemon juice before serving.
  6. 6Garnish with fresh parsley and serve hot.
