- 1 cup brown or green lentils, rinsed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups vegetable broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 tsp dried thyme
- 1/2 tsp dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 1 tbsp lemon juice (optional)
- Fresh parsley, chopped (for garnish)
- 1Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
- 2Add garlic and cook for 1 minute more, until fragrant.
- 3Stir in lentils, vegetable broth, diced tomatoes, thyme, oregano, and bay leaf. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
- 4Remove bay leaf. Season with salt and pepper to taste.
- 5If desired, stir in lemon juice before serving.
- 6Garnish with fresh parsley and serve hot.
