Crispy Cauliflower Buffalo Wings

- 1 large head of cauliflower, cut into florets
- 1 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup unsweetened almond milk (or regular milk)
- 1 cup buffalo wing sauce (Frank's RedHot recommended)
- 2 tbsp butter, melted
- Optional: Blue cheese or ranch dressing for dipping
- Optional: Chopped celery and carrots for serving
- 1Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper.
- 2In a large bowl, whisk together flour, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and pepper.
- 3Gradually whisk in almond milk until a smooth batter forms. Ensure there are no lumps.
- 4Dip each cauliflower floret into the batter, ensuring it is fully coated. Allow excess batter to drip off.
- 5Place the battered cauliflower florets in a single layer on the prepared baking sheet.
- 6Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- 7While the cauliflower is baking, prepare the buffalo sauce. In a bowl, whisk together buffalo wing sauce and melted butter.
- 8Once the cauliflower is baked, transfer it to a large bowl and pour the buffalo sauce over it. Toss gently to coat evenly.
- 9Return the sauced cauliflower florets to the baking sheet and bake for another 5-10 minutes to allow the sauce to set.
- 10Serve immediately with blue cheese or ranch dressing, and chopped celery and carrots, if desired.
