  • 1 pound elbow macaroni
  • 1 1/2 cups raw cashews, soaked in hot water for at least 30 minutes
  • 1 cup nutritional yeast
  • 1/2 cup vegetable broth
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon turmeric (for color)
  • Salt and pepper to taste
  • Optional: Breadcrumbs for topping
  1. 1Cook the macaroni according to package directions. Drain and set aside.
  2. 2While the macaroni is cooking, drain the soaked cashews and add them to a high-speed blender.
  3. 3Add the nutritional yeast, vegetable broth, lemon juice, garlic, onion powder, smoked paprika, and turmeric to the blender.
  4. 4Blend until completely smooth and creamy, adding more vegetable broth if needed to reach desired consistency. Taste and adjust seasonings with salt and pepper.
  5. 5Pour the cheese sauce over the cooked macaroni and stir until well combined.
  6. 6If desired, top with breadcrumbs and bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until golden brown.
  7. 7Serve immediately.
