Creamy Vegan Mac and Cheese
A comforting and cheesy vegan mac and cheese made with a creamy cashew-based sauce.

- 1 pound elbow macaroni
- 1 1/2 cups raw cashews, soaked in hot water for at least 30 minutes
- 1 cup nutritional yeast
- 1/2 cup vegetable broth
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon turmeric (for color)
- Salt and pepper to taste
- Optional: Breadcrumbs for topping
- 1Cook the macaroni according to package directions. Drain and set aside.
- 2While the macaroni is cooking, drain the soaked cashews and add them to a high-speed blender.
- 3Add the nutritional yeast, vegetable broth, lemon juice, garlic, onion powder, smoked paprika, and turmeric to the blender.
- 4Blend until completely smooth and creamy, adding more vegetable broth if needed to reach desired consistency. Taste and adjust seasonings with salt and pepper.
- 5Pour the cheese sauce over the cooked macaroni and stir until well combined.
- 6If desired, top with breadcrumbs and bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or until golden brown.
- 7Serve immediately.
